I’m a chef, entrepreneur, researcher, communicator, and connector of people. And yet, all of my passions share a common element: generosity.
Generosity has always been the foundation of my culinary vocation. Through cooking, I’m able to offer moments around the table that create pleasure, unity, and happiness—an immense responsibility I cherish deeply.
The Mediterranean as a Source of Inspiration
I live in what I consider to be one of the richest environments in the world: the Spanish Mediterranean, an inexhaustible source of inspiration.
Curious and tenacious, I firmly believe that with effort and dedication everything is possible. This is why I am committed to protecting every aspect of our natural environment.
Monastrell opened its doors in 1996, becoming the space where I could unleash my creativity through high quality ingredients, by bringing our customs of the past to the present, and by reinterpreting our roots and traditions. Today, however, Monastrell represents much more.
It has become a reference point for haute cuisine at a national and international level. We have welcomed hundreds of thousands of people from every corner of the world, becoming a participant in their stories and some of their most cherished memories.
Terramón. My Green Heartbeat
Terramón is much more than a fruit and vegetable garden.
By applying natural techniques like regenerative agriculture and crop rotation, and transforming organic waste into nutrient-rich soil, Terramón showcases how gastronomy can drive circular and sustainable food practices.
With a diverse array of vegetables, fruits, and crops harvested seasonally, the majority of the fresh produce that enhances Monastrell’s dishes comes directly from Terramón’s fertile lands.
From Mediterranean Tradition to Global Recognition.
Our commitment to elevating the Mediterranean diet has earned us accolades such as a Michelin star, two Repsol Suns, and a Sustainable Sun, allowing us to share our passion for excellent food with the world.
I am honored to be recognized as a Spanish ambassador for the Mediterranean diet and that my work in developing, researching, and promoting this rich culinary tradition globally has been awarded the Gold Medal for Merit in Fine Arts.
