A proposal marked by the criteria that have always guided the personal style of María José San Roman, based on "The 5 S's"(in spanish): tasty, healthy, sustainable, social and supportive, where the Mediterranean diet is the undisputed protagonist.

María José San Román

Her cuisine is tasty and healthy, endowed with intuition and knowledge of tradition. Her investments in R + D + i have allowed her to delve into the knowledge of foods that are so present in our gastronomy such as; rice, bread, saffron or olive oil.

Her international travels, representing Spanish and Alicante gastronomy, have given her a deep knowledge of the cuisines and products of the world.

The product

Each foodstuff is carefully selected keeping in mind it’s quality, if possible should come from close producers and respectful in its production system, with the environment and with the people who make it. All of them with an exceptional and artisanal production process.

Terramón,our vegetable garden

In 2020 we launched our farm,the Terramón vegetable garden,a farm with 15,000 m2 in Mutxamel, there is where most of the vegetables we work with come from.

On the farm, we work with biodynamic and permaculture criteria, without the use of any chemicals, creating a fertile horticultural and fruit-growing space on previously abandoned and caked land. The warmth of the temperatures recorded in Alicante, an efficient use of water and organic matter, have allowed us to obtain tasty results that we put on the table today.

Meat and fish

The meats are organic, some of them have Protected Geographical Indication.

The fish are certified with the MSC seal, the only wild-capture fishery certification and labeling program that meets the best practice requirements established by the Food and Agriculture Organization of the United Nations (FAO). The fish are certified with the
